4 EASY STEPS TO ROASTING TOMATOES

1. Stretch a buck and buy tomatoes in large quantities when in season

 2. Cut tomatoes in half and drizzle some E.V. olive oil, S&P

3. Slam in the oven on 350 for 40-45 min or on the grill while it is still hot after your weekend grill out.

 4. Once roasted, freeze in separate containers for your cooking and eating pleasure during the week.

 

THINGS TO MAKE WITH A ROASTED TOMATO

*Roasted tomato, basil and cream cheese spread

*Spinach, fontina cheese, roasted tomato panini

*spaghetti

 

MY FITFOODIE ROASTED TOMATO MED CHEF SPECIALTY

 This dish is easy, nutritious, and will have your taste buds dancing in no time!

WHAT YOU NEED FOR THE MEATBALLS:

ground turkey

1/2 c whole wheat bread crumbs

one egg white

1/2 tbsp red chili peppers

large hand full fresh-cut basil

fresh chopped garlic

mix the above ingredients into a bowl and roll into any size meatball you would like and bake at 350 degrees for 20 min or until cooked.

WHAT YOU WILL NEED FOR THE MAIN DISH:

fresh chopped garlic

12 roasted tomatoes

1/3 C red table wine 

2 C spinach

1/2 C Kalamata olives

large handful of fresh-cut basil

feta cheese

whole wheat fettuccine pasta (al dente)

In a pan saute your garlic, add your roasted tomato, 1/3 C table red wine, your baked meatballs, spinach, kalamata olives and 1/2 of the basil. Let all of these flavors and ingredients marinate together. Once pasta is cooked (al dente) drain keeping some of the starchy pasta water in your pot. Pour pasta and starchy water into the pan with all of the other ingredients.  Allow to simmer on low for 10 min, carefully stirring. When your ready to serve sprinkle your feta cheese and basil on top and enjoy.
