Gratin Gone Good!!

There are so many delicious things you can make with summer yellow squash. I recently made a Summer squash goat cheese potato gratin. YUMMY!!!


2 medium yellow squash
4 small to medium red potatoes

4 ounces goat cheese
salt and pepper
1/4 cup low-fat milk
1/3 cup freshly grated parmesan cheese
1 tablespoon thinly sliced basil

Preheat oven to 400 degrees.

Slice the squash and potatoes into thin slices.

Step 1:

Pour a small drizzle of olive oil in a casserole dish and spread it around the bottom and sides.

Place 1/2 of the squash and potato slices in the bottom of the dish, then season with salt and pepper.

Top with half of the goat cheese.

Repeat Step 1

Once you have layered the squash and potatoes pour the milk over the entire dish and top with the parmesan cheese. Cover and bake for 30 minutes, then uncover and bake 15 more minutes, until the top browns. Scatter the fresh basil before serving.
