Fruit Filled “FIBER BOMB” Muffins
Muffins have always been known to end up on the bad list, the do not eat list, you better think twice before putting that in your mouth list. With all the fat, sugar and butter inside of muffins, a breakfast item should really be a dessert item.
The muffin man has now revamped these dirty little sugar fat bombs into what I call fiber bombs. Loaded with the right fat and sugar. The added benefit is all the fiber you get from the whole wheat, fruit, and oats along with a little bit of protein from the greek yogurt. These can be made with your fruit of choice; peaches, bananas or apples. For these fruit filled “fiber bomb” muffins I used strawberries and blueberries, yum yum!
1 cup oats
1 cup blueberries and 1 cup of diced strawberries
1 1/3 cups whole wheat flour
2 1/4 tsp baking powder
1 tsp cinnamon
1/4 tsp banking soda
1 tsp salt
8 oz greek yogurt
1 large egg
1/4 cup vegetable oil
1/2 cup brown sugar
1 cup skim milk
Preheat oven to 375 degrees.
Use cooking spray to coat your muffin tins
*Toss 2 Tbsp all-purpose flour with blueberries and strawberries in a small bowl.
*Combine remaining all-purpose flour, whole wheat flour, baking powder, cinnamon, soda and salt.
*In another bowl, beat 1 c. oats, yogurt, egg, oil and brown sugar until well blended. Stir in milk.
*Stir the yogurt mixture into the dry ingredients until blended.
*Gently fold in blueberry and strawberry mixture.
*Transfer batter to your muffin tins and bake until the muffins are well browned and a toothpick inserted in the center comes out clean, about 40 to 50 minutes. Cool pan on rack for 15 minutes.
Enjoy for breakfast or before your workout!
