NO COOK DINNER!

This is my favorite meal to make and when I first started cooking this was the first thing I started with, cold pasta salad. If you don’t cook then I encourage you to try making this and eventually you will experiment with other ingredients and become your families chef. 

When I was living in Palm Springs and on the coast of California where it was hot in the summer. I wanted to make something without having to heat up the kitchen. I also wanted many flavors to satisfy all of my taste buds and have leftovers for several days.

Thus the cold pasta salad, with which you can put just about anything in. Serve as a side dish or the main course. This only takes 10 minutes to make and lasts several days.

 Rainbow Rotini Pasta Salad

What you need:

3 c whole wheat rotini pasta

1/2 bag of raw spinach

1 c of artichoke hearts

1/2 c of sliced black olives

1/3 c of red onion

1 c sliced cherry tomatoes

1/4 c of chopped basil

1/4 c of grated or shredded parmesan cheese

1/4 c of E.V. olive oil

Juice of one lemon

S&P

Red pepper flakes

Boil water and place rotini pasta in and cook thoroughly. Prep and slice you olives, tomatoes, onions, and basil. Once Pasta is cooked drain well and place in a large bowl. Add your raw spinach, artichoke hearts, black olives, onion, tomatoes, basil, extra virgin olive oil, parmesan cheese, lemon juice, pinch of S&P and red pepper flakes. Mix all together and enjoy for dinner, lunch or side dish with a nice chicken breast.

Whole wheat pasta is high in fiber and protein which will keep you feeling full and satisfied longer and will keep you from eating so much, fills you up faster. If you have not tried switching out your white’s for browns, the benefits alone from eating whole wheat will motivate you to make the switch with everything. Try it and eventually you will never go back.
