Chicken Lettuce Cups

This is a perfect summertime feast, lite, healthy, and flavorful!! Easy to make and can be done in under 20 minutes.

This meal contains a local item and a home-grown item as well…

What you need:

1 diced chicken breast

2 cups of soba noodles (Japanese buckwheat noodle)

1/3 c of  diced celery

1/3 c of diced carrots

1/3 c of diced red bell pepper

1/2 c of diced okra (McCoy Garden)

1/4 c of East meets West Proper Sauces, Ancient Texas Secret flavor. (Made in Austin, TX)

Butter lettuce

In a pan sweat out your carrot and celery, add your diced up chicken, red bell pepper, and okra. Cook together until everything is half way cooked through, then add your sauce and allow to simmer until completely cooked through. In a separate pot boil you water and add your soba noodles. Wash off your butter lettuce and once the main course and noodles are completely cooked add you noodles to the chicken mix and pour into a serving bowl and sprinkle sesame seeds on top (optional). Serve with your butter lettuce and enjoy the sweet, spicy, and tangy flavors inside your crisp lettuce wrap.
