Easy Stuffed Peppers

Peppers are such a nice treat, you can stuff them with just about anything. Last night we stuffed them with brown rice, black beans, diced tomatoes, and shredded chicken.

What you need:

Any color pepper

1 c brown rice

1 can black beans

1 can diced tomatoes

one chicken breast

DASH cayenne pepper

1 tablespoon ground cumin

1 tablespoon paprika

1 tablespoon chili powder


Begin with cooking your brown rice, and boiling your chicken breast. Next take your peppers and cut the tops off and clean the insides out. Steam the peppers until they are cooked through. Once rice is cooked add your black beans, diced tomatoes, then add your cayenne pepper, cumin, paprika, and chili powder. Sprinkle a little S&P. Once your chicken breast is cooked, let it cool and then shred and add to rice mixture. Mix together and stuff the peppers, top with mozzarella cheese or any cheese you may have.

Bake in your oven at 350 for 20-35 min just to warm everything together and melt or crisp your cheese. Serve with non-fat greek yogurt as your sour cream replacement and salsa.
