Fo Fried Chicken and Fixin’s



This meal is an easy, nutritious, filling, and have your cake and eat it too kind of dinner……

Fo Fried Chicken with all the Fixin’s


What you need:

Collard Greens

Braggs amino acids

1 c of water

Butter (yes I said it, BUTTER)

Sweet potato


Chicken breast

1 egg white

Dijon mustard

Corn meal

In a saute pan place a dolop of butter and let that warm, throw you greens in along with 1 c of water, and sprinkle in 1/2 tbsp of braggs. Let all of this cook together. (this is the vegetarian option) The other option is using bacon butter instead of butter and a low sodium chicken broth instead of water and braggs. completely up to you both a healthy alternative. You do not need much for these yummy bad boys.

Next start your oven to 375, poke holes in the sweet potato and cut in half, spread a little butter on each side and drizzle honey then put the cut potato back together, wrap in foil and bake for 45-60 minutes. Turn your greens on low and let simmer, adding water if need be.

Take your chicken breast and filet in half, mix your egg white and 2 tablespoon Dijon mustard together. Dredge the filet chicken breast into the mixture then dredge in your corn meal until coated. Place in the oven at 375 and bake for 20-25 minutes or until chicken is thoroughly cooked.

Once everything is finished place the chicken on top of the greens and enjoy this FO FRIED CHICKEN AND FIXIN’S !

*A lovely dipping sauce for the chicken is a simple honey and Dijon mustard mix together.
