OKRA, a Backyard Delicacy

Okra Marinara over Rice

 

Yes, I know what your thinking a twist on marinara. It was delicious!

My backyard is sprouting up okra every which away. Last night we made stewed okra with turkey Italian sausage, diced tomatoes, and onions left over from our backyard.

What you need:

Butter

Okra

Diced tomatoes

Turkey Italian sausage

Bulb onions

Chili Powder

Cumin

S & P

In your cast iron skillet, add 1/2 tbsp of butter and melt, then add your diced up okra and let them cook through, add your diced tomatoes, 1/2 c water, 1/2 tbsp chili powder, 1/2 tbsp cumin, and pinch of S&P. Allow to simmer for several hours.

When you are 1 hour away from eating, cook you brown rice. While the brown rice is cooking add you diced turkey italian sausage to the okra and once this is done cooking you are ready to eat!

*I made the okra a tomatoes on Sunday to allow several hours of stewing. Then once it cooled I placed it in the refrigerator until the next day, then started the process again for an hour while the brown rice cooked and the turkey Italian Sausage. With most sauces, or stews I like making them a day ahead for efficiency and to allow all the flavors to marinate together over night.
