An easy weeknight meal…
Sometimes you just don’t feel like putting together a meal, especially after a long day at work. DON’T CALL THE PIZZA MAN!!!!!!!!!!!!!!! This meal is packed with flavor, super easy, and can get the whole family involved.
Curried Corn Bisque & Panini’s
What you will need for the soup:
2 teaspoons vegetable oil
1 cup fresh or chopped onions
1 tablespoon curry powder
1/4 teaspoon salt, or to taste
1/4 teaspoon freshly ground pepper
2 16-ounce packages frozen corn, or 3 10-ounce boxes
2 cups reduced-sodium chicken broth
2 cups water
1 cup low-fat milk
pinch of goat cheese
*(to sprinkle on top of soup)
In a soup pot add your vegetable oil and onions and cook until the onions sweat, then add your curry powder, S&P. Mix around and add your corn, broth, and water. Bring to a boil. Once boiling put in your blender or food processor and mix until creamy. Add back into your stew pot along with your milk and allow to simmer until ready to eat.
While the soup is stewing pull out your whole wheat bread, lunch meat, cheese, vegetables, anything that is a random straggler in the frig. At this point you or someone in your family can help assemble the Panini’s. We used spinach, tomatoes, left over brie cheese and some all natural lunch meat ham. This is a time for you to get creative and clear out some items in your frig. However to cut the calories, do not eat a full sandwich. Make and eat half of a Panini and the more veggies the better.
In your cast iron skillet add a little butter and slowly place your Panini in the skillet. Using another cast iron or something heavier in your kitchen place it on top of the sandwhich to flatten the Panini’s.
Again the sandwhich can have anything you desire. For balance and portion control only eat half of your sandwich and with cheese less is more, the more veggies the better for flavor and nutrition.
I ate the other half of my sandwich and soup for lunch the next day and it was great as a leftover.
