Acorn Shepherds Pie

Who doesn’t like a good old fashion shepherds pie? I know I can’t pass one up but I sure can pass the calories up that come with this traditional pie. I took a Shepherds pie and made it fit for every foodie.

What you will need:

Acorn Squash

Red skin potatoes

Ground turkey

Carrots

Bell pepper

Onion

Garlic

Portobello mushroom

Paprika

Dried Oregano, basil, and parsley

Sea Salt and Pepper

Start by cutting your acorn squash in half and roasting it in the oven at 375 degrees with a little Extra Virgin O.O. Then clean and dice your red potatoes and start boiling them in a pot of water. While those items are cooking you may start to sweat out the onions and garlic, add in you carrots, portobella mushroom and green bell pepper last add your ground turkey.

Once your acorn squash is fully cooked bring it out of the oven to cool, after the potatoes are cooked mash them and set aside.

Stuff the acorn half’s with the ground turkey mixture, take a big spoon and spoon your mashed red potatoes on top of the meat and mold it until you no longer see the meat mixture.

Brush a little butter on top of the potato and place in the oven and bake for 20 minutes or until golden brown on top.

Careful when you cut into it, you will be sure to devour the whole pie.
