20 Minute Meatless Monday, DONE!

Portobello Bruschetta

This is a delicious and light summer Meatless Monday dish that will have every meat lover in your house drooling. PROMISE! Seven easy ingredients needed that’s it I promise, most of which are in season and can be done in twenty minutes or less. This just keeps getting easier and easier doesn’t it?

What you need:

Portobello Mushroom





Whole Wheat rotini Pasta

Monterey Jack or mozzarella cheese.

Oil up your portobello mushroom and slam them in the oven at 375 for 10 minutes. Meantime saute your garlic, tomatoes and spinach. Boil your water for pasta. Once your mushrooms cooked spoon in your garlic, tomatoes and spinach. Cover with your cheese and slam them back in the oven for another 5-10 minutes or until your cheese is where you want it to be.

Serve over your whole wheat rotini pasta and shred a little parmesan cheese on top and enjoy this flavorful and easy Meatless Monday Meal.
