Tight on budget and keeps you lean all at the same time….
This was easy, fun, delicious, cheap, oh and did I mention GOOD FOR YOU!!!??? (hence the tight ASS you’ll still have after eating these)
I got a little creative on this one. Since we usually have a bag of corn tortillas lying around I typically oven bake them into tostadas. This time I really wanted taco shells, so I took the corn tortillas sitting in my refrigerator and brushed them with some olive oil and hung them upside down on the oven racks. Keeping two oven racks in between the shells creating a nice pocket to stuff all of your meat and veggies in.
Normally I cook with ground turkey but I felt like I needed some iron so we cooked with lean ground chuck.
What you need:
Ground Turkey or beef
Small amount of shredded cheese
First brush your tortillas and hang them upside down in the oven at 375 for 15-20 minutes or until they are crispy to your liking. While they are “hanging out” dice up your onion and saute in a pan, add your meat, sprinkle your paprika, cumin, and chili power. Sprinkle as much or as little as you would like. Add a pinch of salt and a big dash of pepper.
While the meat is cooking dice up your tomatoes, finely chop your lettuce, slice your avocado, shred your cheese, and wash your cilantro. Place all of these on a plate (I wish I took a photo of our plate of toppings, it was beautiful!).
Once your taco shells and meat are ready start assembling and ENJOY your Taco Tuesday!
