This was so easy, so delicious, so filling and so good for you!!!!
What you need:
Boneless skinless chicken breast
One can of diced tomatoes
Fresh diced tomatoes (if they are in season)
Place your chicken breasts in a baking dish, pour 1/2 cup of chicken broth, sprinkle the chicken with S&P, oregano, and half of your diced garlic, then pour your can of diced tomatoes on top along with your fresh tomatoes, sprinkle another pinch of S&P, oregano and the rest of your diced garlic. Sprinkle you chopped basil on top and cover with foil. I season everything in layers, really does something to the food. Bake in the oven at 375 until your chicken is done.
We made a side of whole wheat rotini to place the chicken and its beautiful juices on top. You can do any kind of whole wheat pasta, polenta, grits or potatoes, preferably red skin (less starchy).
We also sprinkled a little Parmigiano-Reggiano on top of the chicken. This was so fresh tasting and it was beautiful for the season, all of the red and green. These photos are before I baked it, I was so hungry that I forgot to photo the end result. I guess you will just need to make this for yourself to see!
