Enough hummus for a week and it takes 5 minutes! The only part that takes the longets is roasting the garlic. Here is where this gets fun, turn your oven on to 400 degrees and roast as much garlic as you want. I usually do a whole bulb, I cut the top off and wrap it in foil and roast. When it is done roasting all you need to do at that point is squeeze it out. Your house will smell amazing!
While your oven is one throw in some peppers or anything you want to roast and can easily add into your hummus for an extra twist of flavor.
I decided on a simple lemon garlic hummus…….
After the garlic is roasted, squeeze into your blender or processor. I used my smoothie blender since it was already out making juice for the little guy. Squeeze the garlic, add your can of garbanzo beans, 1/2 tbsp of tahini, 1 juice of a lemon, 1 tbsp extra virgin o.o. and whatever else you may have roasted to add, peppers, tomatoes, carrots, pine nuts…….BLEND and EAT!
