Butternut Squash Lasagna Rolls

This dish is packed with flavor and loaded with vitamins. Easy to make and freeze for later on down the road. What you need for your butternut squash lasagna rolls:

1/2 roasted butternut squash

3 cups of cooked spinach

Sauteed garlic

1/2 of a puree cauliflower

1/2 cup of ricotta cheese

1/2 cup of mozzarella cheese

1 cup of marinara sauce

10 lasagna noodles

In a large bowl mix your roasted squash, spinach, garlic, cauliflower, and ricotta cheese. Spread onto your al dente cooked lasagna noodles and roll them up. Hug them tightly into your baking dish, pour your marinara sauce, cheese and bake until the cheese is nice and gooey.
