This Avocado pesto plate is the perfect dish to make as a side dish or main course for this years upcoming green holiday! Its green, easy to make and extremly nutritious.
What you need:
2 cup of spinach (reserve 1 cup for later)
4 cloves of garlic
Pinch of salt
Pinch of pepper
Extra virgin olive oil
Whole wheat angel hair pasta
In a food processor combine all of the ingredients above. With the olive oil circle around the food processor 3 times.
Puree until you have this……..
Start boiling your water to cook your pasta. Cook your pasta al dente and add the other cup of spinach. DO NOT STRAIN the pasta. Pour out some of the pasta water leaving 1/4 cup of pasta water in your pot. Pasta water is liquid gold, the starchy water will bind everything together. Pour in your avocado pesto and mix around gently coating your pasta while it simmers. Once your liquid has absorbed into the pasta then it is done.
Optional meat dish:
With the chicken, I squirted them with the fresh limes, chile powder, and parsley. Baked them at 375 for 20 minutes. When the pasta was cooked I placed this on top. DELICIOUS!!!!!
