This is what we had yesterday along with our corned beef. Who says you can’t have a meatless shepards pie for Meatless Monday?
What you need
2 tbsp of Greek yogurt
1/2 cup of low fat milk
First start with peeling and cutting your potatoes and place them in a pot of water and allow them to boil until they are cooked.
Next, cut all of your veggies and saute, add tomato paste along with salt and pepper.
Once the potatoes are cooked add the Greek yogurt and milk, mash them up. In a baking dish, pie tin or individual baking dishes, place all of your cooked veggies, then spread your mashed potatoes on top. Brush the top with a little bit of butter and chop and sprinkle some garlic.
Bake at 375 until golden brown.
