Made this yummy and flavorful sweet potato “burger” last night for din din and it was a hit!
What you need:
2 medium peeled and cooked sweet potato
1 can of navy beans
1 tbsp tahini (optional)
1 tbsp maple syrup
1/4 cup whole wheat bread crumbs
1/2 cup whole wheat flour
2 tsp paprika
1 tsp pumpkin spice
Pinch of salt and pepper
2 tsp onion powder
Panko bread crumbs
Mash your sweet potato and white navy beans together, add your tahini, maple syrup,
bread crumbs, flour, paprika, pumpkin spice, s&p and onion powder. Mix everything and coat in panko bread crumbs and sprinkle again with s&p and cinnamon. Bake at 375 for 25 minutes. Serve on lettuce and top with avocado slices.
I added a creamy horseradish sauce that is made with Greek yogurt rather than mayo. This can easily be made if you have horseradish, Greek yogurt, lemon, and paprika.
Minus the horseradish sauce this is a vegan friendly meal and oh boy is it good!!!!!
