Mmmmmmmmmmmm!!!!!! These tasted like a really fat stuffed rolled taco and they aren’t FRIED!!!! You can use your imagination on what to stuff these tacos with. Since last night was meatless Monday I protein packed these bad boys…….
What you need:
1/2 cup shredded cheese
What I stuffed my tacos with:
Homemade pinto beans, mashed.
First turn your oven on to 375 and hang your tortillas upside down on the oven racks. Bake until they are crisp. Sorry, I did not grab a photo.
Next, saute the mushrooms and spinach, then stuff the tacos with beans, mushrooms, and spinach (or whatever you decide to make). Place tacos in your baking dish, sprinkle with cheese and place back in the oven until cheese has melted.
Simple, delicious and SUPER EASY!!!!!!
On the side of my plate you will see a mashed avocado with a spoonful of Greek yogurt mashed into the avocado……..
