Spaghetti Squash Fritters

I usually make these when I have just made bolognese sauce which I pour over my roasted spaghetti squash. I always have leftover squash so I turn them into fritters. Nolan loved them, this is the best way to get your kids eating healthy!

What you need:
1 cup roasted spaghetti squash
Feta cheese
1 egg
1/2 cup of whole wheat flour
Parsley flakes
S&P
Optional, Greek yogurt

In a bowl mix your spaghetti squash, feta cheese, egg, flour, pinch of salt, pepper, and parsley flakes. In your cast iron drop a little bit of butter, for each fritter form in the palm of your hand and make just like a pancake.

Serve with Greek yogurt and enjoy!
