These were amazing, especially with the creamy sriracha avocado sauce drizzled on top. My son and husband absolutly loved these!
What you need for the Fritters
1 cup of cooked quinoa
1 cup of shredded carrots
1 cup of cooked yellow squash
1 cup of cooked zucchini
1 cup yellow or white onion
Pinch of salt and pepper
1/2 cup of bread crumbs
For the avocado sauce
As much or as little sriracha as you want
3 tablespoons of non fat Greek yogurt
1 tablespoon extra virgin olive oil
1/2 tablespoon of red wine vinaigrette
Splash of fresh squeezed orange juice
*Before you begin forming these patties make sure you have patted the shredded veggies with a paper towel. If there is any moisture in the veggies then they will become soggy while cooking.
In a bowl combine all of the fritter ingredients into a bowl, mix and form. You can pan fry them in a cast iron or bake at 375 until golden brown. It is obviously healthier to bake these, and honestly they taste just as good.
For the sauce, place all ingredients into a blender and puree until it looks like you can pour over your fritters.
We ate these on top of lettuce, they were soooooooooo good!!!!!
