This was something that I quickly threw together and it was really good. I figured if it was this easy to make and delicious, well then I should share it!
What you need:
White fish fillets( we did tilapia)
1/3 cup of All natural pork sausage
1 cup of quinoa
Start cooking your quinua, saute your 1/3 cup of all natural pork sausage. Once sausage is cooked add your turnip greens in and allow to cook down. Spread feta on top of your fish and place your sliced tomatoes on top, sprinkle with olive oil and pepper. Bake at 400 for 10-15min. Depends on your oven. White fish cooks fast. Prepping this takes 5 minutes, cooks in 10 and down the hatch in 2!
Done! No seriously that is it. It tastes great, looks great and is great for you. Now go get those ingredients and make this for fish Friday!!!!
