Veggie Bolognese


This perfect meatless Monday treat will leave you wanting seconds…..

What you need:
Yellow squash
Black olives
Artichoke hearts
Diced tomato
1 can of tomato paste
Fresh herbs from garden or store:
Flat leaf parsley

Dice garlic, onion, and carrots, combine in a big pot. Once these have cooked a little, dice and combine everything adding your tomato paste, diced tomatoes and 1 cup of water. Add your herbs and a little salt as much pepper as you would like. Allow to stew as long as you would like.
Cook thin spaghetti whole wheat pasta, top with parmesan and ENJOY!
