Fit Fun Food For the Family

These 2 easy dishes are not only super easy, super yummy and super fun to get the kids involved in the kitchen.

Momma’s Mediterranean Mac n Cheese


What you need:
Whole wheat elbow pasta
Creamy feta cheese, low fat is better
Cherry tomatoes
Roasted acorn squash

First cut the skin off of your acorn squash, spoon out the center and diced into 1/2 in squares. Roast at 375 until cooked. Boil your water, cook your pasta. Drain water, reserving 1/4 cup of the pasta water to help all flavors combine together. Add your spinach, acorn squash, tomatoes and 1/2 cup of feta cheese. Momma’s Chicky Chicky Nuggets


What you need:
2 chicken breasts
1/2 cup of corn flakes
1/2 cup of panko bread crumbs
1 tbsp of paprika
Pinch of salt and pepper

In a bag crunch up your corn flakes, this is the part where you can get the kids involved. Dice your chicken into nugget sizes. Add in the bag your panko, paprika, salt, pepper and diced chicken. Let the kids shake, shake, shake!!!!


Bake at 325 until chicken is cooked. Make a side of honey mustard and enjoy!
