Buffalo Chicken Salad

Summertime is a perfect excuse to start killing the carbs in the evening. I try to kill carbs after 3 unless I am doing a late afternoon workout. Regardless we try to kill carbs for dinner, try it a few nights this week. You may start to feel better, sleep better and hell even look better!

This salad is a no brainer! It’s easy, light and has a nice kick to it!

What you need:
2 chicken breast
Head of romain lettuce
Diced carrots
Diced celery
Franks wing sauce
Blue cheese

For the dressing:
1/4 cup of extra virgin o.o
2 tbsp nonfat Greek yogurt
Fresh flat leaf parsley
Salt
Pepper
Lime juice
Blend all ingredients in your blender

Now, cut you chicken into slices, start sauteeing your chicken. Once chicken is halfway cooked add your wing sauce, as much or as little based on your tolerant scale.
Wash and chop your lettuce, add your carrots and celery, toss with your dressing and place cooked chicken on top and sprinkle your blue cheese.
