Summer Side Salad

I am really trying not to use the oven this summer. It heats up the house and I would rather save on energy. It also is too hot to eat heavy meals. This salad can be shared with any meat you might be grilling over the summer.

What you need:
1 cup of cooked quinoa
1 cup of steamed chopped beets
1 cup of steamed carrots
1/2 cup of feta cheese
Handful of chopped walnuts
Chopped fresh basil
Splash of black truffle oil, email me fitfoodiemccoy@gmail.com for a really nice local and affordable truffle oil.

Combine all ingredients and ENJOY!!!!
