Your Tummy will thank you after this meatless meal. Half veggie sandwhich, half the carbs and double the yumminess!
What you need:
Rustic whole grain bread
Tomato slices or diced
For the cream sauce:
1 tbsp Greek yogurt
Pinch of fresh rosemary
Pinch of fresh flat leaf parsley
Saute your garlc, tomato, eggplant, onion and spinach. Toast your bread, spread your cream sauce on your bread, place your avocado slices on top, then your veggie medley, finally your cheese. Place your loaded bread into your cast iron and put a lid on top. Turn your heat on just enough to melt the cheese. You could also place in your broiler but I was trying to avoid turning the oven on.
