This lighter summertime version of chicky chicky parm parm (chicken parmigiana) will satisfy your taste buds and its SUPER EASY!!!!!
What you need:
Roman lettuce or Green leaf
For your Basil Vinaigrette dressing:
Fresh chopped basil
2 tbsp Olive oil
Splash of red wine vinaigrette
Dice your garlic and start cooking in a cast iron add your chicken, diced tomatoes, half of your basil and all of your oregano. Add a splash of water to create a little juice to pull the flavors together.
Once your chicken has finished cooking dice it up next dress your salad with the basil vinaigrette dressing and finally your chicken and mozzarella cheese.
