This was really really really easy to make and will keep your family thinking you were in the kitchen all day long!
What you need:
Beef flank steak
Red bell pepper
Chicken broth, low sodium
Spicewood Springs 12yr aged balsamic, email to order firstname.lastname@example.org
Greek yogurt, non fat
Flat leaf parsley
Salt and pepper
Cut you asparagus, zucchini, and red bell pepper as thin as you can. Wrap your asparagus, red bell pepper and zucchini up with the steak and secure with tooth picks. In your cast iron sautee your garlic and onion. Place you rolled steak veggie into the cast iron and brown on both sides, add 1/2 cup of chicken broth. Cook steak to your liking, keeping in mind it will not take very long with flank steak. Just before you turn the heat off add your 4tbsp of Spicewood balsamic over each piece of meat.
While the meat is resting blend 1/4 cup of Greek yogurt, parsley, rosemary, oregano, salt, pepper and a splash of olive oil. The Greek yogurt sauce is to pour over your steak. We made mashed sweet potatoes to eat as a side dish.
