Breakfast for Dinner


If you have left over grilled veggies from the weekend and you are not sure what to do with them. Make a yummy heart healthy protein packed meatless meal for this meatless Monday…..

What you need:
Left over grilled veggies (we used asparagus)
Red potatoes
Parmesan cheese

Cut red potatoes up into small squares and steam in a steam basket. Once cooked sautee in your cast iron with salt and pepper. Once the potatoes are done, spinkle with parmesan cheese. Place your leftover veggies in a different cast iron and break your eggs over and cook. Place veggies, eggs and potatoes on your plate and enjoy.

Easy, easy, easy!
