FALL Into This 3 Step Soup….


And you thought you couldn’t cook……

Not anymore, this recipe will make you look like you’ve been cooking for years AND it is super easy!!!!!

3 Step Acorn Squash Soup

What you need:
1 large or 2 small acorn squash
1 carrot
1 celery
1 onion
1 cup chicken broth
1/2 cup of water
1/2 cup of milk
Pumpkin pie spice
Salt and pepper

Step 1:
Cut squash in half, scoop out the seeds. SAVE the seeds, turn oven to 400, roast squash face down along with seeds. Seeds are done when you smell them and squash is done when you touch the shell and it is soft to the touch.

Step 2: Cut up your carrots, celery and onion and saute until soft, sprinkle some salt and pepper then add your chicken broth and water.

Step 3: Scoop out your acorn squash from their shells and add to your veggies and broth. If you have an emersion blender or blender this is the time to blend everything together. Once everything has been blended, turn your stove back onto low and add your milk and spices to the soup. Allow to simmer about 5-7 minutes.


The fun part has begun, serve with a scoop of goat cheese and sprinkle your seeds onto the top of your cheese.
