Butternut Squash Shepards Pie


UHMAZING!!!!!! Seriously, this was delicious!!!! Did I mention this can be done in thirty minutes, given your squash has been roasted ahead of time. Proper meal planning is the key to eating right. Roasting all squashes at once is an easy way of turning a lame week night meal into an incredible experience.

What you need:
1 roasted butternut squash
Lean ground beef
2 Zucchini
1 Onion
2 Carrots
1 Green bell pepper
1 can of tomato paste
Pumpkin pie spice

Cut your squash in half and roast face down at 400. It’s done when the shell is soft to touch.

In your cast iron, dice your onion and start sauteing. Dice up your zucchini, bell pepper, carrots and add to your onions. Finally add your ground beef and tomato paste and cook together.
Scoop your butternut squash out of its shell and mush together in a bowl. Add it to the top of your beef and veggies.

Drizzle your honey and sprinkle your pumpkin pie spice on top, place in your broiler until edges are crispy.
