This was an easy meatless Monday meal, full of flavor and a fun twist on a typical ratatouille.

What you need:
Whole wheat rolls
Mozzarella cheese
1/2 Onion
3 whole tomatos
1 can of tomato sauce

Dice your garlic and onion and saute in the pan, dice your tomato, eggplant and zucchini and saute adding in your tomato sauce, sprinkle some salt and pepper and allow everything to simmer until it is all cooked through.


Take your rolls and cut them in half, hollow out the bottom bun. I do this for two reasons, one to cut the carbs and two, so I can fill it full of the yummy mixture I just made. Broil the buns for maybe 2 minutes. Pull them out and fill with your mixture, top with cheese and broil for another 2 minutes.


I made a side spinach salad with garbanzo beans and black olives. Since it is meatless Monday there needs to be protein in some part of the meal. The garbanzo beans and spinach helps out in that department.
