Snowy Holiday Stuffed Sweet Potatoes


This is the easiest side dish, its delicious and looks beautiful!

What you need:
3 Sweet potatoes
6 cups of spinach
1/2 cup of dried cranberries
1/4 cup almond slivers
1/4 cup parmesan cheese

Wash your sweet potatoes and bake whole at 425 until you can push a fork through and you feel the softness of the potato. Saute your spinach, cranberries and almonds. Saute until spinach is cooked.
Once your potatoes are cooked, pull them out and let them cool down. Once cool slowly peel back the skin on top and mash the potato around and down. Stuff them with your mixture, sprinkle your snowy parmesan cheese and place in your oven just long enough to melt the cheese.
