Twice Baked Butternut Squash, OH YEAH!

This was yummy and filling! Makes as a perfect low carb side dish for any meal.

What you need:
Butternut squash
1/2 cup nonfat Greek yogurt
1 tsp pumpkin pie spice or all spice
1/2 cup shredded cheese
1/4 cup of fresh squeezed orange juice

What to do with all of this…..

Roast butternut squash at 375 for 20-40 min. Depending on your oven, you want the squash to be soft to touch. Take it out of the oven and allow it to cool. Once the squash is cool to touch, spoon out the squash into a bowl and add all of the above ingredients except for the cheese. Mix well and place back into the shell of the squash. Sprinkle the cheese on top and place back into the oven at 425 until golden brown on top.

We enjoyed chile lime rubbed baked chicken and a fresh spinach salad, you can have this alone or as a side dish, enjoy!
