20 Min Meal, take that Rachel Ray!!!


Let’s be real about Thursday, its not quit Friday but its almost the weekend. We usually get lazy about cooking, at least I do on Thursday’s. After training people all week during the day and every night in the evening, I’m pooped! I have my last group of ladies Thursday evening and am usually stacked up Friday during lunch hour with clients. When Thursday roles around I want easy. I usually make a “fancy” quesadilla or grill cheese bar for the boys.
Let’s make this Thursday easy, let’s only focus on 5 ingredients and 20 min, okay 10 extra min to grab all 5 of these ingredients at the store.

What you need:
Whole wheat rotini pasta
1 bag of spinach
1 already peeled and diced butternut squash
1/2 cup of pecans
1/4 cup of feta cheese

For the dressing:
1 juice of a lemon
2 tbsp Greek yogurt
Pinch of salt and pepper
2tbsp extra virgin olive oil

Roast the squash at 375 for 20 min, while that’s roasting boil your pasta. Once the pasta is done, pour the water out and place in a bowl, add your spinach, roasted squash, feta cheese, dressing, and mix well. Finally sprinkle in your pecans and serve.
