This soup is super lean and flavorful, packed with protein and REALLY easy to make!
What you need:
Low sodium chicken or veggie broth
5 chicken sausages, I used feta and spinach sausage
1 shredded chicken breast or rotisserie chicken
1 can of diced tomatoes
1 can of garbanzo beans
1 bag of spinach
First cut the sausage into 1/2 inch bites and saute in your soup pan. Boil your chicken breast in a seperate pot or use a rotiserrie chicken and just pull the meat off. If you boil the breast, you will need to wait for it to cool before shredding. Once your chicken meat is ready, toss it in with the sausage. Finally, add your broth, can of tomato and can of garbanzo beans. 5 minutes before serving, add in your spinach.
