This can easily be done on a weeknight, its full of protein and flavor!
What you need for sauce:
1 jar of ready made vegetable primavera marinara sauce
1 can of diced tomatoes
Whole wheat pasta
What you need for meatballs:
Ground turkey or lean ground beef
2 handfulls of spinach, 1 cup
1/2 chopped onion
1/2 tbsp of worcestershire
1/2 tbsp dijon mustard
Salt and pepper to taste
Mix all of the meatball ingredients and roll them into meatballs, whatever size you want. Bake them at 350 until cooked through, clear juices running. While the meatballs are baking, add some chopped garlic and extra virgin olive oil to your pot, add your mushrooms, jar of veggie primavera and can of diced tomatoes. Allow to simmer.
Once the meatballs are done, add them to the primavera sauce.
All you need to do is cook your pasta and enjoy!
