Were the words that my husband used to describe this meal, while he was licking his fingers clean. We try and eat meatless once a week, sometimes its Monday and sometimes not. We do this because we have a pretty high protein diet so its nice to take a break. This week we made portabella cheese steak sandwiches. My husband loved them and he LOVES meat!
What you need
Whole wheat subway or bolillo rolls
4 portabella mushrooms
1 green bell pepper
1 slice of provolone per person
1 tbsp low sodium soy sauce
1 tbsp worcestershire sauce
1/2 cup low sodium vegtable broth
Pinch of S&P
Pinch of oregano
Start with slicing your onion and green bell pepper and start with sauteing those. Once they have sweated out a bit add your diced portabella along with the spices and sauces.
While everything is cooking, slice a pocket into your bread. Once the veggies are complete, stuff the bread, top with cheese and stick in your broiler just long enough to melt the cheese.
