Fit Foodie Approved Kids Meal….


Homemade chicken fitnuggets and mac n cheese, minus the cheese…..
This is a kids meal every kid will approve of and they can have fun helping you make it. I promise this is a winner winner chicken dinner!!!!

What you need for the mac n cheese, minus the cheese:
1 box of whole wheat elbow pasta
1 butternut squash
1/2 cup of low sodium chicken broth
1/2 tsp nutmeg
Cut your butternut squash in half, roast flesh side down at 425 for 20-30 min. Its done when you push on the shell and its soft to touch. Remove the squash and let it cool. Once it is cool enough, spoon the flesh out of the shell, place it in a sauce pan with your spices and chicken broth. Allow to simmer for just a few minutes. Next, put it into a blender and blend. You will only need 1 cup of this pureed squash but what you just did was made enough to freeze for another evening.
Boil your pasta, once boiled drain the water and add 1 cup of the squash, allow to simmer together for just a minute or two.

What you need for the chicken fitnuggets:
Chicken breast (plan on 1 chicken breast per person)
1 cup of corn flakes
1/2 cup of panko bread crumbs
Pinch of salt and pepper
1/2 tbsp of paprika
1-2 tbsp of mustard

In a zip lock bag combine your corn flakes and panko and have your little one’s roll them out.

Once they have been rolled out sprinkle in your spices, then chop your chicken adding the mustard and chicken into a bowl and mix.

Finally add your chicken into your zip lock bag and shake, shake, shake!!!!
Oil your baking sheet with extra virgin olive oil and place the chicken onto it. Bake in the oven at 350 for about 15-20 min or until the chicken is cooked through.

Finally it’s time to eat!!!!
