Simple Stir Fry….


This was delicious, flavorful, loaded with veggies, protein and it was MEATLESS!!!!

What you need:
Udon wheat noodles or whole wheat fettuccine noodles
2 cups of chopped kale
1 thinly sliced red bell pepper
4 shaved carrots
2 cups of sliced mushrooms
1 cup of bamboo shoots
1 cup of baby lima beans
2 eggs
1 tbsp of low sodium soy sauce
1 tbsp chili garlic sauce

Start out by cooking your baby lima beans, they take 20-30 minutes. While those are cooking, in a big wok add your sliced mushrooms, chopped kale, thinly sliced bell pepper, shaved carrots, and bamboo shoots.

While that is sauteing, scramble your 2 eggs in a separate pan. Once your lima beans have finished cooking, add the noodles to them. Once the noodles have finished, strain them both.

Finally add the noodles and lima beans to the veggies.

Add your egg, soy sauce, chili garlic sauce and mix everything together. My husband wanted extra protein so he added cashews right at the end. Amazing!!!!
