EASY Artichoke and Asparagus Barley Risotto


I was a little skeptical at first because when it comes to risotto, it must be done right. Risotto is cooked with arborio rice and is a little high maintenance, during the week who has time to stir for 30 min? This crock pot barley risotto was super easy and really yummy!

What you need:
Low sodium chicken broth
1/2 chopped sweet onion
Chopped garlic
Artichoke hearts
Parmesan cheese

Start by sauteing your garlic and onion. Then chop your asparagus and add that to the onions and garlic along with your artichoke hearts.


Saute everything for 5 min, just enough to sweat it all out. Then add all of these goodies to your crock pot with 2 cups of low sodium chicken broth and 1 cup of water along with 1 cup of barley.


Turn your crock pot on high for 3hrs, shave some parmesan and then EAT!!!


We ate it with that Pork we grilled on Sunday. Another yummy meal that was prepared ahead of time!
