Meatless Monday in Minutes…


4 ingredients and maybe 4 minutes and you will be enjoying this delicious dinner tonight.

What you need:
Whole wheat pasta (any kind you like)
1-2 eggs per person
Parmesean cheese

First chop and sautee your asparagus, do this while you are boilibg your pasta water.


After the asparagus is cooked to your liking and your pasta is cooked, cook your egg. You want your egg to remain runny inside(unless you don’t like that, then cook all the way.) You can cook the egg any way you would like. Finally mix the pasta and asparagus together, lay your egg on top, sprinkle your parmesean cheese and enjoy!
