CALLING ALL KALE LOVERS, oh and everyone else…


Here is my disclosure, YOU DO NOT HAVE TO HAVE KALE WITH THIS DISH! But why would you not? It’s so high in calcium, vitamin C and K and rich in beta carotine. Not to mention its crunchy and pretty to look at. Okay, okay I haven’t sold you on it yet, then just substitute the Kale with butter lettuce or romain.

These to die for lettuce cups only need:
Kale, romain or butter lettuce
Diced chicken
Diced apple
Diced zucchini
Diced yellow squash
Chilli sauce
Real maple syrup

In a cast iron skillet toss all of the above diced items in and saute until cooked.

Finally add 1tbsp of chili sauce and 2tbsp of maple syrup. It really all depends on how spicy you want this dish. More spice is fine but more sugar is not. Real maple syrup actually has the least amount of sugar compared to white table sugar, brown sugar or honey. Just remember, its gotta be REAL maple syrup!
