Um, WOW! These were amazing. This also got my wheels turning with the number of things you can stuff into these delicious little bad boys. These had an Italian twist along with backyard garden goodies to top them off!
What you need:
4 portabella mushrooms
1 cup of cooked quinoa
5 cups of raw spinach
1 can of tomato paste
1/2 cup of low sodium chicken broth
Monterey jack cheese
Start with sauteing your onion, then add your 4 cups of raw spinach and cook those down, finally add your can of tomato paste and chicken broth. Allow everything to simmer together, then mix the spinach in with your already cooked quinoa and stuff your portabellas.
Enjoy as a side dish or as your main course!
