Roasted Chicken Zucchini Tostada

These little things were delicious! We used left over roasted chicken that we had made on the grill, then topped with fresh veggies. YUMMY!

What you need:
Corn tortillas
Chicken
Zucchini
Cheese
Spinach
Tomato
Non-fat Greek yogurt
Avocado

Frist start with making your corn tostadas, preheat oven to 350 and lightly brush olive oil onto each corn tortilla. Bake about 10-15min. While those are baking slice your zucchini long ways and sautee.

Take the corn tostadas out as soon as they are golden. Not brown but golden. Top the tostadas with your zucchini, chicken and cheese.

Bake until your cheese has melted.

Then top with all of the appropriate goodies.
