GUILT FREE Creamy Fettuccine

Who said you can’t have your Fettuccine and eat it too! This meatless meal can be made any day of the week, you won’t even miss the meat.

What you need:
Whole Wheat Fettuccine pasta
1 zucchini
Asparagus
Mushrooms
1/2 avocado
Hand full of fresh basil
1/4 cup of walnuts
Parmesan cheese
Salt, pepper and olive oil

First chop your veggies and start sauteeing them. Then boil your water for pasta. Finally blend together your avocado, walnuts, basil, salt, pepper, and touch of olive oil. Once your veggies and pasta have finished cooking, reserve 1/4 cup of pasta water. Add the pasta to the veggies with the pasta water along with your blended avocado sauce. Mix all together, shave parmesean cheese and enjoy!
