5 min DINNER!

This was Sunday night’s dinner. After coming in from a long weekend we were exhausted. My husband helpled me with meal prep for the week and then we threw together this yummy, I mean yummy salad!

What you need:
Cooked chicken breast
Arugula
Granny smith apple
Pecans
Bell Peppers, red, yellow and orange
Pecans
Goat cheese

For the dressing:
2 tbsp extra virgin olive oil
Pinch of cayenne Pepper
1 tbsp red wine vin.
1/2 tbsp brown sugar
*these measurements are enough for 2-3 people. Double for 4-5.

For the chicken:
Paprika
Salt
Pepper

Roast your chicken at 325 until it is cooked, poultry should be reading 165.
In a bowl toss your arugula with the dressing. Then top the arugula with all the above ingredients. Enjoy!
