Frank and Beans!!!!


My husband suggested the title of this post. This meal is full of protein, and flavor. This version of frank and beans is a much better alternative for you.

Pork and beans

What you need:
Raw navy beans
2 Carrots
2 Celery
1 onion
2 cups of low sodium chicken broth
Pork tenderloin

1 tbsp Oregano
Bay leaf
Pinch Salt
1/2 tbsp Pepper

Cook your raw beans to the instructions on the back. In a separate pan saute your diced onion, carrots and celery. Add this to the beans along with the spices and chicken broth. Continue cooking the beans.
Next, you can roast, bake or grill your pork tenderloin. Cook anyway you desire.
Finally, assemble it all and enjoy with a nice side salad.

The beans and pork can be made ahead of time, when you have the time and then assemble as a week night meal. I have always found that beans are best the next day, after they have sat in their juices and spices. Perhaps this can be made over the weekend and devoured on a night when you are in a dinner pinch????!!!!!!
