FitFoodie APPROVED Huevos Rancheros

This was easy and delicious. Make this any night of the week, it only takes 20min!

What you need:
Corn tortillas
1 cup of black beans
1/2 cup of diced tomatoes
1/4 cup of shredded cheese
1-2 eggs per person
Avocado
Cilantro
1/2 onion
1/4 tsp cayenne pepper
1 tsp cumin
1/4 cup chicken broth

First, bake corn tortillas with a little olive oil brushed onto them at 350 for 15-20min or until they are crispy enough for you.
Second, dice your onion and sweat them out in a pot, add your cayenne, cumin, chicken broth and diced tomato. This is the ranchero sauce.
Next, warm your black beans up and mash them. (Fake and Fit refried)
Finally, start cooking your eggs, anyway you want. I prefer sunny side up.
Last, assemble them. Spread your beans onto the tortillas. Place the egg on top of the beans, pour your ranchero sauce and sprinkle with cheese, cilantro and avocado.

We ate the mess out of these and then realized after we demolished them, we never put the cilantro on top. It was sitting on the counter all clean and chopped. Please don’t forget the cilantro and please ENJOY!
